This is one of my favourite meals.

1. Cut the **** outta some chicken.
2. Fry that ****er and salt and pepper his wounds.
3. Sparta-kick the remains into a tin.
4. Pour cream and green pesto together with that chicken and beat the **** out of it so it's all mixed up and ****.
5. Throw the tin into your oven and boil some rice while you're at it. Multitasking b****!
6. Berserk random animals to bits while food is cooking to prepare for future meals.
7. Consume meal.

Here's the recipe for pörkölt as cooked by my father's side of the family. (mother's side is good too, but it's less so )

Chop some an onions up (adjust to desired portion size) and cook 'em till they soften up. In the mean time ready some wine or boiled water. Once the onions are ready add a lumpy table spoon of fresh paprika (hungarian is superior in every regard, but you can buy decent ones in Indian and Polish shops).

Now this is the hardest part, as paprika burns real quick, (10-20 seconds) you have to stir it into the onions so they quickly absorb as much as possible. Once that's done (and assuming you didn't cock up) quickly add either red wine or some boiled water. (enough to envelop the onions, for now)

Then add the desired meat of choice, chicken pieces work the best, but pork is good too, beef isn't compatible. Mix it up and wait for every chunk of meat to go white, at which point add enough water to envelop it all. Add salt and pepper, but no other spice is advisable, simply not needed, paprika and salt are fabulous when done right

This can be eaten with pasta or rice. I tend to opt for the latter since they meld nicely, and supermarket pastas bring down the quality of the meal in my mind. Normally you'd make your own pasta for this dish, called galuska, it is soft pasta that works very well with the pörkölt.

since it's basically the fungi season here, I'd like to share a nice little recipe to roast them.

you'll need:
Some fungi ofc.
small to large onion(any color, I prefer red ones)
sour cream
flour
any sort of cooking oil(I prefer hazelnut or sunflower oil)
a pinch of salt and spices according to taste.
some meats. bacon(any kind) or something spam like if you're a cheap little bleeper.



steps are pretty simple
clean up your fungi(I don't trust store bought ones, because it's very easy to get food poisoning from those), add a bit of cooking oil in the pan and toss everything else in it. stir until sour cream and flour are mingled with the rest of the ingredients.
Takes about 15-20 minutes to fully cook.
the whole meal goes well with roasted/boiled potatoes.

how is anyone supposed to follow a recipe without heat specs, or measurements?

here, i'll play too.

here's what you'll need:

some stuff
some other stuff
meat
vegetables
grease or oil


take some stuff, toss in light oil, cook that. as that simmers, add some other stuff, and some liquid. boil until it smells good. add meat. simmer. vegetables. broil. take a shot of grease. repeat.

golly that's good stuff.


kidding aside, i love dishes from other countries, and would love to taste what you guys eat(aside from your wives and girlfriends, of course). so, like, SPECIFY. i don't want to waste food by ****ing up the cook times, heating, measurements, etc.

nevermind. i just had an idea.

This is the way old recipes always are written. There are not quantities, just vague ways of doing things. Mostly I think that's because it's the way people cooked back then. More are than science - you knew how to do things, and you used what ingredients you had on hand.

I never measure anything while cooking, which is mostly some various foods I threw in a pan for 20 mins or pre made food stuff, like those frozen veggie packs.
Always done "by the eye".

And it is difficult for me to generalise how much of each ingredient you need. I eat a lot.

Today, when I fried the shrooms I found, there was roughly 80 grams of them, to which I added one small red onion, a tablespoon of flour(wheat), half a pack of sour cream(~75 grams), and a can of "hikers breakfast"(just some processed "junk meats" which come from legs, jaws and such)

Yeah, that's how I've always done things too.

My friends are starting to get the hang of my measurements now after 20 years. They already understand the difference between 'Enough' and 'Adequately'.

Like how I make bread:
water and yeast depending on how much bread you want to make
then add a suitable amount of rye flour (and some sugar/spices if you wish)
add salt adequately
just mix in wheat flour until the dough is good
then add a little oil to make it a little too wet
let it rise till it's good again
then put the oven on and make the bread into a suitable shape
throw some water or flour on the bread, depending on what kind of crust you want
bake till it's done
Enjoy fresh with butter

These kind of recipes expect you to be able to cook or bake to begin with so you have an idea of how much of something will make it taste good and what would be too much. Noob cook books are for scientists and kids.

Just curious, when was the first time you guys started making food by yourselves, how did you start and how do you progress? I've for long wanted to be able to make my own food in stead of the fastfood stuff I eat, but I'm afraid I'll just ruin it.

thanks. and saved. i'm the same way when cooking if not by a recipe, i just made a guesstimate on the ingredients i used to make a stew i made years ago. i almost forgot the butter.

@ ohfor: just start throwing stuff together. learn a little bit about what each ingredient does. try different things. you could do small portions, in case you are afraid of ruining food and wasting money. so far, i've only ruined one meal.

NEVER use lemon herb tuna in hamburger helper. BAD idea.

It just takes practice, finding what works and what doesn't by trial and error. Reading lots of books and watching lots of cooking shows helps. Especially I recommend Alton Brown's Good Eats (or associated books). I learned an incredible amount from that show. Once you learn the basics - such as how to properly pan-fry a plain chicken breast, or how to make a simple custard - you will be surprised at how well you'll be able to pull of more complex dishes.

I don't even remember the first time.
I probably started helping my parents make food as soon as I could walk. Maybe earlier. I don't remember a christmas when I wasn't baking. I also remember coming from fishing with a friend and smoking the fish we had caught when I was eight. Remember baking with grandma when I was four. I've always just cooked/baked. That's like asking when did you first start talking

Just open a recipe from the net and follow it to the letter. Food done. It's not like cooking/baking is hard.
Then choose a different one.
And a different one.
Don't stop until you've made everything in the book.
Then do everything from the book but alter every recipe, never do the exact one that's in the book. Now you know what does what and how things work. You also know how to cook/bake.

i'm guessing rye bread is the bread you make? i've never made bread, but i LOVE homemade bread you can rip without squishing too much. what does flour or water do to make a crust?
