One of the soundtracks in the original Stronghold that I used to pause the game in order to listen to was the combat music whenever you're fighting The Pig. I couldn't find it on YouTube though. It featured the violin.
I really liked Honor Medley a lot too. The part starting at 1:45.
Also the Baldur's Gate 2 dragon battle music was awesome.
And the vocal tavern song from Storm of Zehir

From the Baldur's Gate Series, I always loved this theme the best: Bhaalspawn Battle
I attempted compiling my favourite game music, only to come to the realization the vast majority of it kindof very really extremely enormously sucks.
Oh well, I think CIV4's Baba Yetu(uploaded from our dearest Shryanis), CIV5's England Peace Theme, the Victory Song from Emperorand The Main theme of Dungeon Siege.
