In the kitchen: The Food Thread

Share your delicious discoveries and unknown local secrets here. Give elaborate recipes with long lists of ingredients or just simply give a hint such as yogurt and garlic always go well together, it's all up to you. Just let us be grateful and make us thank you when we burp, who knows, if all goes well, maybe, we can even persuade the British members not to eat fish with ketchup.

I do not believe they show the cooking method. I'll start easy to make dinner!

Oriental pork chops

4 pork chops
salts
curry powders
2-4 onions
4 spicy apples
4-6 tablespoons of pickles
parsley
mandarin orange blocks

1. Season the chops lightly with salt and curry richer and place on a flat oven dish.
2. Peel and chop the onions and apples into small cubes. Share cubes and pickles chops.
3. Cook the food uncovered 225 degree oven for about 20 minutes. Then lower the temperature to 200 degrees and cover the dish with foil or oven bag. Simmer chops for about 40 minutes or until they are soft.

Decorate chops with mandarin and parsley and serve hot.

for meat stuff I use a spice mix which contains the following:

Bear's Garlic
Nettle
Lovage
Oregano
Thyme
Parsley

It's also good for your metabolism and digestion tract.

some other thing I like to use is ground up flax and hemp seeds.

Keep in mind that it's not just any fish, it's fried haddock or cod and the ketchup is for the chippy, some like it on their fish bits too and it's great, it's not an outrageous combo.

Trying to rediscover some old hungarian meals that I used to have. Spinach is a nice cheap and very nice dish that I like to make (and perfect).

Have about 1cm of oil at the bottom of the soucepan, gently add plain flour and stir, til it looks tan, you can add more to make the spinach more solid, but it's better if it's moist imho.

Once the goo turns golden add the spinach. Now, depending on the spinach you may need to add water immediately (some canned ones are marinated in water, while others are packed tightly and completely drained, or if using fresh spinach you may wish to add water). The water is just there to moisten it.

Now, sprinkle both sugar and salt on top, the quantity isn't as important as equality, it is key that one does not overpower the other, if you get it right it's perfect.

Around mid way once the spinach has started turning into almost a goo like substance you'll want to add a dash of milk, it adds a very satisfying texture. At the same time sprinkle some garlic powder on it.

Cook till it has turned into a goo.

Fish n' Chips is a classic, simple and delicious meal, although if I have anything to say about it, I'd rather replace the chips that go on the side of the fish with fish, and rename it to Fish n' Fish. Now that's a proper meal. Take notes, England, I'm providing for you an upgrade.

Well, I have this tongue in cheek theory that the more your sense of taste improves the less things you add ketchup to. Look at 10 year olds, they like everything with ketchup because it's sweet and they usually hate any sophisticated sauce, especially if it's hot or bitter. Personally, I'm down to fries and sausage when it comes to ketchup and that's just every once in a while, sausage is already a sweet meat and mustard brings out the flavor by giving it a balance. (Adding both ketchup and mustard means you are hopeless.)

When it comes to ketchup with fish, I'm from the Agean, fish means olive oil, sometimes a little lemon, fried white flour etc... Putting all that sweet ketchup to a fish meal would be simply a sin, not much different than adding raw sugar to a steak.  Just ask Elvin.

You need the basic ingredients: eggs, breadcrumbs and butters!

1. Dip the fillets into the egg.
2. Dip the fillets into the breadcrumb.
3. Fry the fillets in the heated fat.

You can add white pepper, lemon pepper, or even mustard. Fish Spices You can mix the wheat flour with breadcrumbs. Rye flour!

I've come to the point in my life where I'd literally murder someone for kg of szalonna. When I was in the scouts (in Hungary) I was given a bigger slice of szalonna than my bread (hungarian bread is proper, thick and crispy crust), and god since that day I craved for it.

Can't get it in England, the pigs are just not the same and there isn't really a perceived market for it, and according to my folks that often make trips back home say that there are regulations against bringing szalonna to England, which seriously makes me weep. (though about 6 years ago they managed to smuggle some back, and I got to have some trimmings, I seriously had mouth orgasm).

My dream is to sit outside on a log, in simple hand made garment with a funny hat, and big knife, just cutting a loaf of bread and slicing some meat, and at my feet I'd have a tankard of Tokaji. Every now and then I'd let-off a big fruity laugh and would pat my beard dry.

My food story

This last year my interest for food has exploded. It all started when I moved to Copenhagen, where I live alone. I started making food for myself of course and just kept getting better. My father is a former chef, so food has always been a big thing in my life, but I have never had the facsination for it.

But somewhere around new year I just become awesome at it. I started baking as well, which became a great passion of mine; baking bread not much cake.

Being a student money isn't what you have a lot of, so I started to think of cooking food that was cheap, but full of flavour! This has become my specialty and I try to encourage other young people to cook on their own and not just live by eating pasta with ketchup.

I spend a lot of my time watch Food Tube on Youtube and Munchies from Vice. I really recommend these channels for inspiration!

But well, I would happily share my recipies and what I do. For a starter go see my instagram emilsn91 for pictures. (if you want that is!)

But great thread! I will diffently be contributing.
