Pictures help, besides, your thread Fred is like the 4th food thread .

Anyway just made a delicious tray of flapjacks, so goddamn simple, wholesome and last for ages.

200g of proper brown sugar.
200g of butter
200g of either honey or golden syrup, now syrup is much cheaper and it's taste fits better imho (i guess if you mess around with the billions of honeys out there you can find a good combo).

400g of oats.

Place the sugar, butter and syrup in a saucepan and on a low heat melt the butter and mix.

Once that's done add the oats and mix well, so that they're all coloured. Then place it in a tin and then the oven till it's nice and golden brown. (it will be gooey at first so leave to cool, or eat then idc)

Roasted Garlic Soup is a nice good mood food.

You need 4 cups of vegetable broth, 1 cup milk, 1 yellow onion, 4 garlic bulbs, 1 tablespoon of sage, some sea salt, olive oil, and preferable some sliced lemon to go with it. Oh yeah  baby.

You take 3 skinned garlic bulbs and coat them with olive oil and sprinkle them with sea salt, then you wrap them in aluminum foil and roast them in the oven for ~20 minutes.

You mince the last garlic bulb, dice the onion, and saute them in a large pot with tablespoons of butter for around 5-6 minutes, then you add the tablespoon of ground sage and saute it for another minute. Add a cup of vegetable broth and let it simmer.

Meanwhile, once the roasted garlic bulbs are cooled off, you take them out and then you grind them against a bowl into a garlic paste.

Then you take your simmering soup and put it in a blender and blend it for around 30 seconds until it's smooth.

Then you add the blend back to the pot along with the garlic paste, 1 cup of milk, and 3 cups of vegetable broth, and bring it to a boil. Then you eat it.

Ofc, it's not a soup with a lot of "stuff" in it. It's a good mood soup that is excellent for dipping some nice bread in. Take some hot buns of black bread with salty butter and dip them in the roasted garlic soup. After the meal, have 1 or 2 lemon wedges for contrast and to eliminate the strong garlic taste. Oh yeah.

Well I mustn't let the female side down, so I will share with you my Japchae recipe.  (Yes, mine is vegan, but I will include meat here for you ravenous flesh eaters).

one good fist full of glass noodles (cellophane noodles)
If you can get dried shiitake mushrooms - 2 large dried shiitake mushrooms.  (If not, just increase mushrooms to 7).
5 white mushrooms, sliced thinly
½ julienned red bell pepper (capsicum)
2 garlic cloves, smashed and finally chopped
Sugar
reduced salt soy sauce
toasted sesame seeds
1 bag of spinach, washed and drained
2 to 3 green onions/scallions/spring onions, cut into 2 inch long pieces
1 medium onion, sliced thinly
1 medium julienne cut carrot
ground black pepper
salt
vegetable oil
sesame oil

For flesh eaters add 1 thin frying steak cut into strips and 1 egg.

If you have the shiitake mushrooms, you will need to soak them in water for 2/3 hours.  Then drain them and then place them in a bowl with a good splash of soy sauce, 1 teaspoon of sugar, black pepper, 1 teaspoon of sesame oil and one of the minced garlic cloves.  Keep cool in the fridge.

For flesh eaters, you add the raw beef to the bowl with the shiitake mushrooms and soy sauce mix.

Its traditional to have sliced omelette.  So beat the egg and fry it until its a nice little omelette.  Then roll it up and slice it to get egg julienne strips.  A tip here for you.  As it is only one egg, heat the pan with the oil - once hot enough turn off heat and fry the egg (not forgetting to turn it over).  This way the egg does not brown.  (There you go a Meroe tip).

Heat a large saucepan with boiling water and blanch the spinach for about 1 minute.  Remove the spinach, rinse under cold water (this stops it from cooking further) and squeeze dry.  Place in a large bowl, cut it a few times (so that it isn't long and awkward and add a dash of soy sauce and sesame oil.  Keep the boiling water on the stove for the noodles.

Cook the noodles until they are soft and chewy - about 5-7 mins.  Drain, cut them and put them in the bowl with the spinach.  Add sesame oil, soy sauce and 1 teaspoon of sugar.  Mix the noodles (not the spinach).

Now you fry the remaining items individually, then add them to the noodle bowl.  You do this because some items cook quicker than others.

The shiitake mushrooms (and beef) should be fried last.

Add the remaining minced garlic clove, soy sauce, sesame oil, sugar and black pepper and mix all ingredients together gently.

Add egg and sesame seeds and plate.  Delish.

Another tip - do not go mad with the sesame oil.  It can easily overpower.

I know this is a food thread, but beverages ought to come under it too, Ima going to get all the resources together tomorrow and start making my own mead following this recipe: Mead. I had intended to make my own Pa'linka, but as it requires distilling equipment it is thus quite illegal, unlike back home .

In Hungary we have a porridge like breakfast dish, but it's naturally sweet and pleasant.

Basically you get finely ground semolina and milk.

Now it varies on how much end product you want and I don't measure out my milk. So anyway, you preheat the milk in the microwave to prevent burning and whatnot, then you place it on a medium-low heat. Now, you gradually add the semolina in very small amounts, over time the milk will have granules forming it that slowly solidify the mixture. I like mine to be a mix between runny and hard, so I really watch how much semolina I use. But yeah, it's naturally tasty and the texture is amazing, you can add cinnamon, sugar, even coco powder just sprinkled on top.

If you like oatmeal, then I suggest apple, sultana and cinnamon.  Go easy on the cinnamon though.  Best to sprinkle that over the freshly cut apple before adding to the oatmeal.

experiment time!

get a hold of some pork. some boneless back meats or cuts for porkchops or whatever.

get a meat mallet. if your pork is one huge piece, cut the flesh of Porky Pig into pieces about 1.5-2 cm thick.

beat the crap out of the pork with the mallet until desired thinness. try not to go with the paper thin like they do in many restaurants.

use seasoning. I used the wild herb mix I posted on this thread, persillade seasoning mix, and garlic granules.
Add BBQ sauce. mix that crap up, let it sit there for about 15 minutes.
when ready do fry, roll the porky in breadcrumbs or flour. Or don't.
do the usual thing, pre heat your stove, add some oil in the pan (I used macadamia nut oil)

fry up until done. took about 7 minutes on a wood burning stove of mine.

Ok now variant time!

Beef with bamboo shoots

about 400g beef tenderloin
2 tbsp oil
2 medium carrots
1 small onion
1 small leek
8 fresh mushrooms
1 red bell pepper
1 bamboo shoots about 225g jar
1 package bean sprout (mung bean's or sunflower's sprouts)
1 tbsp soy sauce
2 tbsp grated fresh ginger
2 tbsp dry sherry
2 tsp corn- or potato strach

You need wok

1. Fry beef strips in oil
2. Add on carrots, onions, leeks, mushrooms and oils
3. Add on bell peppers, bamboo shoots and sprouts
4. Add on salt and black pepper
5. Soy sauce, ginger and sherry
6. Stir the water into the flours then soup with other ingredients
7. Eat with rice or noodle

So food's name!

Tbsp..tbsp..tbsp for school, bad stomach, good taste

Meat patties(the so called kotleti)!

When it comes to meats I go and put a lor of random crap in them. usually it turns out good, and all the people eating actually survive the ordeal(!)

what you'll need for this classic eastern bloc dish, which got treated by my own randomness:

1.5 kilo(~3 pounds) of ground meats. any meats. as long as it's grounded up. you can use more if there are more mouths to feed, but for 3 people, 1.5kg is plenty. remember, more meat, more eggs and filler you're gonna need.
3 eggs
4 large handfuls of breadcrumbs/flour/semolina
1-2 plain red chili peppers
some onion leaves(spring onion should work as well)
BBQ sauce
Pesto dressing
about a tablespoon of adjika. Salsa could work too I guess. But screw salsa. Adjika is superior in every way.
a nice swig of unpasterised microbrewed dark ale(if you use bud light or any other horsepiss garbage, you're a gastronomical disgrace and someone like Gordon Ramsay should escort you out of the kitchen while repeatedly kicking you in the arse)
garlic granules or raw garlic
mediterranian spice mix
any other meat spices you may have
some dutch gouda

for "steaming":
A large onion bulb
some flour
sour cream
water
cheese if some left over from the stuffing
one of those broth cubes

for the side to go with the meat:
buckwheat or potatoes(whichever you prefer)
several large tomatoes
some sour cream
a bit of ground black pepper
some dill if you're using potatoes.


how you do it:
first, cut your chilies and onion leaves. cut the chili into tiniest bits you can. for the onion leaf, somewehere between 0.5-1cm if you wish to be so precise.
Once you've done with the veggies, dump all the stuff in a large enough mixing bowl and mix it with your hands. leave the soon to be patties to chill out for a bout half an hour.
meanwhile, grate your cheese. with a large grater(what we former commies call a beet grater)
the meat should've marinated a bit, and if you're not to drunk from them microbrews, time to form the patties.
each patty shoud be about the size of your hand. into each patty ad a pinch of grated cheese

heat up you pan, and pour some cooking oil in it. be generous with that. about a 0.5 cm deep should be plenty.

fry each side for about 5 minutes.

after you've done with the frying the meat, get a large pot, add your patties there, add some water and the broth cube. put on medium to low heat. meanwhile, fry up some onions. once they turn transluscent, throw them into the pot. add a table spoon or two of sour cream and some more spices if you fancy. also, throw in any of the leftover cheese in there. after about 20 minutes, remove the pot from the heat, ant let it chill out there for about 5 minutes.

now for the side.
boil your potatoes or buckwheat(you can get them at the store, many types come in those bags they sometimes put rice in as well, just follow the instructions on the packaging)
once you drained the water from the potatoes, season them with dill. fresh or dried, it doesn't matter.

slice up your tomatoes into pieces any size you desire. add about 2 tablespoons of sour cram and season with black pepper. mix that crap up.

serve it up. and enjoy.

We don't know are you know Finnish Karelia food. Karelian hot pot was a Finnish Christmas food before Christmas ham into picture also Finnish people never eaten chicken as only the milk like viili, cheese, protein and other pig etc in the last 1960's. We were the barbarian people in the 1940. Because we want not sell in kiosk etc We destroyed to goverment and crazy slimmer program. What children weren't allow eat a bun on morning for protein in school. Ok to you "Karelian hot pot" and you tear a telephone book then! How? You need

500g beef brisket or snank (you can see finnish "lapa")



400g lamb breast or ribs
500g pig brisket or snank ()
1 teaspoon salt
about 1/2 l water

1. Cut pieces of meat
2. You need iron cauldron for meat, salt and water to iron cauldron
3. In an oven at 150 temperature in 4 hours
4. If you want brown color, in 2 hours after you take cover off

Tip: You can add on onions, black peppers, carrots


We hope you will succeed Finnish Karelian food!


Later on you learn add on chilli, cream, potatoes, bay leaves and meat variants
