Okay, let's make one thing clear, there's no way anything under 50% is acceptable. This is a game that's supposed to have a fantasy feel to it, greysh grittiness has no place here.

Loud brightness isn't synonymous with fantasy feel for everybody.
There should be an in-game option to set percentage.

I vote for it to be toggleable. So many different screens out there the saturation level would vary to much.
I like over-saturated so I voted 100%, but I realize I am probably in the minority.

According to my calculations, a 100% population of voters in this poll want an increase in saturation. This leads to the understanding that less grey, more fantasy colors is an unanimous position. Extrapolating this to the entire fanbase and the message is clear: Ubilimbic, giff more colors! Do it.

But this is obvious.  I want to go more in-depth. If someone doesn't know some of the statistical terms, I explained them in this post. One more term, mode - the most frequent value in the set. So, let's go!
Mean: 61.0%
Standard deviation: 19.3%
Median: 60%
Mode: 50%, 60%
As we can see the mean is 61% and when taking std into account it is observable that most people want an increase in colour saturation within the range of 40 - 80%. Additionally, median is very close to mean, meaning that the votes distribution very much resembles the normal distribution, as Brukevarn observed below. So, from that data it can be deduced that increasing saturation by 60% should be highly accepted among the fans. Additionally, Libic may also try to implement additional options from the range mentioned above in to make nearly 77% satisfied with the game's colour. The choice is theirs.
