I am a huge fan of the soundtracks for Civilization 5 & 6 for the PC.
Xenoblade Chronicles X has one of my favorite boss themes ever, called Uncontrollable.

That's not news to me, I already knew about it, although I linked the plagiarism with Disciples III because of the lyrics.
Speaking of which: Disciples III Resurrection Soundtrack, I really liked the game with Reincarnation and the music was also great. Too bad the game flopped, one of the franchises I enjoyed most alongside Heroes of M&M.

The Souls/Bloodborne games have some really great music overall. Just to list a few of my favorites.

All the song titles are boss names just so you know, which is why I just put dots , so click at your own risk.

Also Super Mario Galaxy had some really great orchestral pieces.

Brutal Legend  - one of the best 'all things Metal' compilation I've ever heard. Well, it was created for a game that pays homage to this music genre.
Hotline Miami 2 - trippy, but great
Muramasa: Demon Blade - based on japanese folk music and dynamic, imo one of the most well fitted to what-you-see-on-screen OST's I've ever witnessed in a video game. (if you want a nice taste hit the 02:15:49 mark)
- Myth 1 & 2
- Elder Scrolls: Skyrim -> I think all entires have good OST, but this one I liked the most

More generally (Some of these were already mentioned):
- Civilization series (especially 5)
- Total War series, especially Shogun and Medieval
- Mass Effect trilogy has some unique and atmospheric soundtracks
- Chrono Trigger
- Heroes III and IV (though 5 & 6 also had pretty decent OST)
- World of Warcraft (there's a lot here, if I would ought to pick one, probably Cataclysm)
- Halo series
- Mirrors Edge
- first two NFS Underground games
- Forza Horizon games
- GTA series and Fifa series

Of course a special mention goes to Witcher 3

This is probably the tip of an iceberg though...

For me, the only game where I didn't mute soundtracks was Civilization 4. Palestrina, Mozart, Vivaldi, Beethoven, they picked only at top and didn't cut anything. And when the Largo from Bach's 2 violins concerto started, I was always pausing the game, it looked to me almost impolite to continue. And damnt, that largo is so looong, classical eras took me forever.

Sea Dogs - battle against Spaniards. All themes in the game are extremely good but this one is my favourite. Flamenco with cannonballs.

The Witcher - main theme. Still the best piece of music in the series and one of the best in soundtracks in general (not only for a game).

Diablo - Catacombs. All 4 dungeon types in the original Diablo have great themes but this one is special, mesmerizing.

Dungeon Keeper 2 - despite its less-than-serious atmosphere, this game has a haunting dark music which can easily be incorporated in something horror-themed. This particular one starts rather monotonous but becomes a masterpiece after that.

I know exactly what you mean, though the feeling must be tenfold more powerful to you given your profession.

Heroes 2 was special because of the opera and it matched the towns mighty design. But Romero's music is nowhere near the immortals, so when you listened it 10 times, there is nothing more to discover in. (imo of course)
