The easiest way that comes to my mind is deleting those words from the text responsible for the difficulty.
Go to <Game folder> data. Extract texts.pak
Find the files that have inside the diffuclty text (there should be one file for each difficulty. Inside the file there will be those texts saying "Challenging", "low" etc...). Open those files and delete the words inside.
Save those files and make a new small info.pak file that includes the new files (including the folder tree as it was). Put the pak file back in data and you are ready.

After 20-25 minutes search i haven't found. Anybody knows the name of subfolder? I can only find game difficulty descriptions and skill names (for an example i can find deadly strike)
