I think either one works.
"Will" implies a sense of finality to it. More like a fight to the death, with less speculation.
"Would" implies more debate and theories.

Yes, that's true. But I think 'would' is much more fitting as the fights don't actually take place and we are all theorising who the winner would be if such a fight took place.

Well if they are that big than the squirrel definitely has a chance. They are known to go after larger targets in hope of larger rewards. So that could be quite the bounty they might collect
