The problem is that we're in a complicated situation right now due to my father starting another business, having less people working at our pharmacy and not having found anyone trustworthy enough to help at home, so basically she has double the work and not enough time for the good old family things.

Yeah, for now no lasagna. I'll probably have to wait until Christmas, unless I make my own...

Dude, you live in snowing ITALY. If you can't get lasagna in a 5-meter radius of where you're standing at any given time, you have to be beyond retarded. I mean, what the literal snow. Are you really THAT much of a food snob? I swear to god, i'll slap you over the internet if you say yes.

You also have to be beyond retarded to think that proper lasagnas can be cooked immediately, as the Pugliesi say: "U sugu ave a pippiare per 8 ore", you have to get up early in the morning to prepare some proper ragł and have it ready for lunch, plus the lasagnas need their time to get cooked, all in all, it's not a fast process.

The only real outlet to eat some decent lasagna is going to a Tavola Calda, and hoping that there's something left for you, because yeah, it needs time to be made, so they make 3 or 4 platters of them in advance, and once they're sold out they call it a day. The lasagne made in the tourist trap restaurants are most of the time sour and acidic, there's something either in the sauce or in the cheese that screams "this was made three days ago", hence why I don't trust restaurants anymore in terms of lasagne (and even then, in the good restaurants I go to there usually isn't lasagne on the menu, for a similar reason).

But I'm forced to wait to eat my mother's lasagna anyway unless I make my own with her recipe.

Then there's another problem, in Catania there are so many things to eat that sometimes you just go with what you see, it's been months since I last ate a good scacciata con tuma, mainly because in the mean time I stuffed myself with other delicious things that you can find in that city. I literally can go down the street and get some good baker's pizza (the homemade one), just a few buildings down the street there's a pizzeria, and if I want to walk down even more there's another bakery that sells all kinds of delicious stuff.

You just can't win there.

The lasagna i had at the restaurant close by was excellent; the only thing it was missing was all the baked cheese that made up 30% of the dish, like the one i had in germany. The marinara sauce they used was so thick with tomatoes(while not overpowering the flavor with tomato), i had to fork it onto the fried mozzarella sticks. I think they used the same kind of sauce for the lasagna; it was all wonderful.

That said, i want to visit italy, now.

Dedicated to fred, a little tutorial on lasagna, they even added subtitles for northern Italians and foreigners.

The comments urge me to warn you that this is a Neapolitan lasagna, the Emilian lasagna doesn't use sliced eggs and uses ragł instead of meat sauce, also the only cheeses used are besciamella and parmigiano, regional variations ensue.
We make the Emilian one at home because it's easier and simpler, I forgot to point that out.

Arancino and accartocciata, since I'm leaving tomorrow I'm refraining from cooking.

Also, you can't say no to an arancino.

Well, it wasn't with meat sauce but with simple ragł, but they did a bloody fine job with the peas, they were among the freshest I've tasted in most arancini, it did have perhaps too much saffron, but I did enjoy it a lot.

We take the craft of arancini pretty seriously here.
