Well, there are too many types of “green” olives:
Mediterraneans and Aegeans usually like the brownish ones in the middle and I say this as someone whose great grandfather was in the olive oil business, they are the best. (No Don Corleone joke, my granny even wrote a book about his “Struggle for Olive Cultivation.”)
The actual green ones can be eaten if red pepper is stuffed inside them. (Top left corner) Edit: I know learned that type of pepper is called pimento in English, yes, those.
Black ones go great with pizza and they are the best to mash and eat with bread.
