Ok, it is not easy, but it can be done.  First remember you don't have to block every square, just every other one.  Also depends on how soon the dragon goes, but here are some general ways to help.

Make sure to have Memory of our blood, and as many of the buildings as possible that grants bloodrage.  Keep in mind that you don't have to block every square, just every other one.  Remember to watch how you strike the dragons, so that retals go to one unit only.  If you can block with the fierce retaliate upgrade for warriors, all the better.  Flaming Balistas help, a lot.

Really all depends on luck, and starting ATB bar.  If you can move blockers so that they are seperated by one square from the centaurs, but block the dragons from getting to them or not.  Speed arties also help a bunch.  As an alternative, if you have flaming balistas just leave the centaurs out of the line up and seperate the stacks as much as possible.

How about Phoenix (initiative 19, speed 10)? Phoenix move first and in this case no blockers for centaurs, heavy looses Same things can happen with sylvan dragons ...

All I can suggest is leaving the centaurs out of the battle if possible.  Sadly there is little that can be done.  It's one of the reasons that flaming balistas are so needed for Stronghold.

On the other hand, with Kraugh if you have stunning blow, even against phoenix there is a chance.
