How to change creature ability?

I would like to know how to change a creature's ability or even delete it. For example I would like to delete the ability "no penalty to hand-to-hand attacks" from Zealot and give him 40% magic proof just like the Battle Dwarf has.

Anybody has any links of how to do this or can you explain to me what I need to do?

i dont wont to create unique abilities i just want to delete some of them which are on a creature or give it a new one from a different country.
