Just starting to play? Never played any HOMM game before? A difficult question.
I can only say what I feel about the difficulty of different maps/campaigns. You can get a good start even without the tutorial.
The first map I ever played was All For One from Restoration of Erathia. It is a basic, easy map. The difficulty level of various maps isn't always true. For example, Back For Revenge has impossible difficulty but it is far easier than impossible. There are many harder scenarios that I don't unfortunately remember. I remember a scenario where I wasn't able to survive even a week in impossible difficulty.
I learned pretty fast the basics of playing the game. I've finished all campaigns in hardest difficulty, and most of the scenarios.
The easiest campaigns can be found from Heroes Chronicles. The campaigns of the original HOMM Complete are equally challenging, IMO.

Good to Go leads to quick, fun games with full upgraded armies. If you want to know about any faction lineup, it's a good map for it
I would say SoD campaign. The history it's very interesting and isn't specially hard (since Gelu). You could try it

I is not for me, for someone else. My problem is that standard map playing was so long ago and I remember liking almost all original maps .
But you gave me a good idea. It should be a rather small RoE map. (not so many objects and monsters). Prob All for One.
