With some it is, with others not. I don't see any reason why some of the classic musicians shouldn't have the stamina of some rock & jazz musicians. John McLauglin is 78 and was on tour last year. Jeff Back was 75 on his tour last year, both still every bit as good musicians as ever with abilities only few can match.
One reason may be that - and that is known of Jeff Beck - that these people are playing most of their waking time, because it's what they did their whole life and what they love doing. It IS their life, basically, and permanent training keeps reasonably fit.
It's also a matter of length of performances and pauses and so on - half an hour is still a lot on this level, though.
