It sounds cool but I would still pick The Lord of the Rings because its not just abou witchmen, its about elvesl, dwarves, men, Istari(wizards), and Hobbits. And there are also many others.

Robert Jordan's 'Wheel of Time' though it's not a trilogy just one long epic.

Also Raymond Feist's 'Magician' (Original Trilogy) and 'Empire' Trilogy (with Janny Wurts).

The Warlord Chronicles are good reading. I have only read the first book though (the only book in the series that's been translated to swedish), but I'm looking for the others.
A writer I really like is Michael Ende (I hope at least the Germans in here know who he is). All of he's work are pure genius.

Terry Goodkind? The Sword of Truth?

You're kidding, right? This author is considered a standing joke in most online fantasy communities (like www.wotmania.com). His books are bad (though I've read and bought them all, and probably will again), his views on life and rthics is twisted and he keeps including this stupid goat, for some reason.

No, if you want decent writing, you should check out Robert Jordan, Terry Pratchett, Neil Gaiman, Robin Hobb, China Mieville, or some quality fantasy...

But even so, hopes are great for the next SoT book, since the end of Naked Empire was kinda neat...
