I'm using the coordinates that are marked on the image

Black Rook at e8 move to e2
White Rook at e1 takes it (e2)
Black Queen (h3) takes white rook at f1

I like this one.

1. e6 a6 ; Bishop tied to the king, forcing black to move the Knight. Two possible options here, but both end in black being checkmated.
2. b5 b6 ; mate in three. Both the king and the bishop can't move. Depending on the knight position:

2 ... b4 x a6
3 b6 b7 ++

or

2 ... c5 b7
3 a6 x a7 ++

Here is the solution

1. Ra6! Nc5
2. b6!! (mate in 1)

2... Nxa6

OR

I use the European notation. I prefer it over the algebraic notation.

Yeah I've never used European notation and can't read it for ****. Algebraic is easier for me.

I don't get it, what's so hard about the European one? (I also prefer it over the Algebraic)

You just tell two coordinates for a move, the starting spot (with the piece) and the ending spot. That's all. Only a few other signs such as "x" when taking a piece, "+" when check and "#" or "++" when checkmate. But I don't find these signs necessary, you can clearly see anyway what it is.

A stalemate is a draw. If Black had no legal moves and was not in check, then the game ends in a draw. Look at how in the above diagram, black has no legal moves. The pawn is blocked by the black king, and the king can't move to b2, c2, or d2 because of the white king, b3 or d3 because of the pawn, b4 because of the white knight, c4 because the black pawn is blocking and d4 because of the white bishop,

If you take the queen after Kc3, it's a stalemate. You want to win as white. In otherwords checkmate the black king or win the queen without stalemating your opponent.

It looks like you guys are having trouble getting this one, so I'll give the solution.

1. Bd2+ Kd4 2. Be3+ Kc3 3. Nb4!

Here black has a few responses but all of them are losing.

3... Kxb4 (Black takes the knight but hangs the queen) 4. Bxb6

3... Qxb4 (Loses to the same skewer) 4. Bd2+ Kd4 5.Bxb4

3... Qg6 (Loses to two possible checkmates) 4. Na2# OR 4. Nd5#

3... Qa5 (Attempts to cover a2 and d5 with the queen to hopefully create a zugzweng) 4. Bd2+ Kd4 5. Nc6+ (winning the queen)
