ummmm...
Pillar of Eyes sounds fine, alternatively... Beholder Mother, maybe?
Beholders spawn in the way of an adult beholder removing one of its eyes, which grows into a full-sized beholder... eventually. So, what creates them would be a single old beholder, which is giant and constantly produces offspring... but, of course, that old beholder could be shaped like a pillar and then it'd be a Pillar of Eyes alright.
