Obvious is obvious, 3 it is.
E-mails are the biggest problem for me, it's a degree of official communication that makes me panic, especially when it's actually friends, what am I supposed to say?
Like yesterday, I sent some files for uni to a friend, she of course thanked me through e-mail and... WHAT AM I SUPPOSED TO SAY NOW!?
A text is easier, usual formulas and a tactical emoticon, but can you seriously put emoticons on e-mail? Plus, it's not immediate, am I supposed to say good evening, good morning or whatever?
I just don't like not knowing what to say, that's it.

um... a simple "you're welcome" will do. Or "no problem" if she/he isn't a teacher or sonething. Even "my pleasure" works. When someone thanks you in real life how do you reply to them? It's the same with emails

I'm a very talkative guy despite my apparent shyness, so just replying with that seems a bit cold to me.
Professors are the best, they just reply with an ok.

you don't appear shy at all. On the contrary, you talk (type) a lot 
Also, being polite is not being cold. (Again) on the contrary, saying a simple "ok" can be interpreted as coldness.
Last but not least, professors (well, authorities in general) who reply with ok (but when you need a complete answer) are scumbags in general. I have had a uni professor some 12 years ago who I have contacted about something important for me and instead of pampering me and holding my hands he has just said ok, officially getting his hands clean of me and ruining my day in the process. I never liked such douchebags
