Hydras may be a Boss creature in H6
For me, the ABSOLUTELY mandatory units for every Heroes game are as follows:
- Peasant, Pikeman, Marksman, Crusader, Zealot, Champion, Grffin, Archangel.
- Skeleton, Vampire, Lich, Bone Dragon.
- Imp, Cerberus, Succubus, Nightmare, Devil.
- Pixie, Elf, Unicorn, Treant, Green dragon.
- Harpy, Evil eye, Medusa, Minotaur, Black dragon.
- Gremlin, Gargoyle, Golems, Mage, Genie, Titan.
- Centaur, Troll, Goblin, Ogre, Thunderbird, Cyclops.
- Dwarf, Mummy, Death Knight, Zombie, Elementals, Phoenix, Mummy, Efreet, Hydra...

Agreed, especially since a lot of them aren't actually that unique (Dragons turn up friggin everywhere, and angels and demons are just so clichéd it's not funny, amongst the many other things).
And here's what I'd consider the more-or-less essential list:
- Marksman, Crusader, Champion.
- Pixie, Elf, Unicorn.
- Minotaur, Black dragon.
- Golems, Mage, Titan.
- Goblin, Orc.
- Dwarf, Genie, Elementals, Phoenix, Hydra, Lizardmen, Gryphon, Roc, Troglodyte, Wyvern, Ghost, Skeleton.
You may note that there are no Inferno creatures in there, and no Noecropolis faction. Personally I don't consider them essential.
Oh and BTW Radox, you posted Mummy twice.

Only one really important for the series - the Black Dragon. All other dragons can be massacred and I won't mind their absence, but this one holds sentimental value.
The other, somewhat less important creatures in accordance with their (relative) faction alignment:
Castle/Haven - Pikeman, Cavalier, some sort of Swordsman;
Rampart/Sylvan - Elf Hunter, Unicorn (reworked so it doesn't look like the mare of a fairy-tale's princess - see Disciples III for well-made Unicorn or take the HoMM III War Unicorn);
Tower/Academy - Golem, Genie, Titan (the Mage units can be heroes, no need to be present on the battlefield - they look weird there anyway);
Inferno - only the Devil. Given that this isn't a Kreegan Inferno any longer however, they can add or take whatever they want from here;
Necropolis - Skeleton, Vampire, Lich;
Dungeon - apart from the Black Dragon, only the Minotaur, but not as humiliated as in HoMM V;
Fortress - Hydra;
Stronghold - Goblin, Orc, Cyclops
There you go.

Strange, you gave Lich to Necropolis, but pulled Mage from Academy to 'promote' it to hero (Where we already have Wizard), despite the fact that they're pretty much the same except in vital-status (ie, the Lich is an undead).

You've got a point, but for me the Liches, as they are presented in the M&M universe, have always fitted better on the battlefield than the Mages. They look like some elite magical troops with their helms, armors and staves, unlike the wizards who remind me of something that's gonna suffer very quick death if some sharp-object-wearing grunt gets close.

Yes, but that's the whole point really isn't it, Mages should never get into melee because they're shooter/spellcasters.

I mean that they look unfit even for ranged troops with this light clothing, long beards and overall appearance of scholars. But that may be just me.

They're mages. I think it's safe to assume that they have other means of protection than physical armor.

For me the most vital creatures (that I'd shout if they weren't in the game) are:
Haven:Paladins(/other charging/jousting mounted creature) Monk (/ranged shooter/spellcaster) and Angel/Archangel. Also, I suppose Griffins count too, but since I've already seen em in the promo and that I wouldn't die if they were just neutrals... I'll leave them half-in
Sylvan:Ranged elves (bow n arrow) Unicorns and sprites.
Academy: Golems, Mages, Titans
Inferno Cerebus
Necropolis Skeleton, Vampire, Lich
Neutral/Misc Peasants, Phoenix, Black Dragon

Everything about the Dungeon faction seemed nerfed in H5. If you didn't have the upgrade, it almost wasn't worth the gold to buy most of your available units. It's one thing to have an army that becomes steadily more powerful...but you have to have someplace to start. in H5, I felt like it wasn't worth the effort to struggle through the first two weeks of gametime just to build my army strong enough to fight that neutral stack of Conscripts guarding the Ore Mine...
Even the Shadow Dragon wasn't as devastating as a tier-7 ought to be (but then again, I felt that way about pretty much all tier-7 creatures...)

Black Dragons are iconic to the series. At least as a neutral creature, but they definitely be in the game.
I don't really care THAT much for the rest, albeit some (Titans, skeletons, bone dragons) would be missed.

If it was to leave only one, the most essential and fundamental creature per faction, for me it would be:
Haven: Archangel (should be male)
Sylvan: Unicorn (even though i love elf hunters more)
Academy: Titans
Necromancers: Skeleton (i know it's hard to call them fundamental, but it's even harder to imagine necropolis without skeletons)
Inferno: The mighty Devil
Dungeon: Black Dragon
Stronghold: Cyclops
Fortress HOMM3: Hydra
Fortress HOMM5: wouldn't miss any of them
Neutral: Phoenix (ehhh.. wish he didn't become blue)

Halflings have to be in there.
Dwarves need to be in there.
There's other omissions, but those 2 are just unforgivable.
