Well they never handled leveling well in the first place if you ask me, you could always easily get an extremely OP or under powered team due to too many or too few levels.
A better way in my opinion, and a way I've always advocated is to set the opponent level equal to the level of your pokemon multiplied with some scale factor depending on the difficulty of the opponent.
The scale factor can be greater than 1 except if you have level 100 pokemon in which case it will at most be 1, but then the opponent would more often have a full team anyway.
Also like in the anime some battles will e.g. have at most 1-5 pokemon, hence you'd have to pick some over others.

Not enough money in it? Well people are begging for various remakes, this would be their ultimate dream maybe? But yeah, from money standpoint it's better to make remakes of each and every game Pokemon probably

Interesting idea, but I think it would be better if they simply reduced the one-shoting with weakness attacks. Also, there's also another simple thing: just give Gym Leaders and other key trainers at least 5 Pokemon. Elite Fours are harder because of their almost full line-ups and mixed Type teams (even if they have a single theme). With Gym Leaders a single super effective Pokemon is usually enough to smack them. Though they are going in the right direction: there are some tricky Pokemon here and there in Sun/Moon that can give you some challange (for instance with no obvious weaknesses).
The thing that I'm advocating is: if they still say Pokemon is mainly for kids (yeah who still believes that?) then add a New Game+ mode right from the get go...

This. When even the main villain only has a team of four...why am I the only person on the continent who has a full team of six??? Elite Four trainers have no excuse not to have a full team.

The gen. I play doesn't have one-shot weakness, or not a lot of it at least.
In gen. 2 you can max every exp stat, so there is no "everyone has max attack / speed" or similar.
Of course extremely dangerous opponents like Smeargle, Alakazam (who can even avoid it with a reflect), etc., simply put frail opponent, can and will still be one-shot by a powerful attack, but I think that actually balances the game quite well.
About gym leaders and a super effective attack.. I haven't really played a lot of the other generations, but definitely if you know what you are doing gyms become easy. In Gen 2, you can't use that tactic on the first, third, fourth, or eight gym simply because those attacks won't be available unless you level your pokemon beyond that of the gym leader.
But if you level your pokemon beyond that of the gem leader, then we are back at the original subject of the post of yours I replied to.
Don't get me wrong, I'd like for stronger opponents to also hold some tactics and have a broader team they pick semi-randomly, perhaps with a little knowledge based on the gym matches you have with her/his students.

Perhaps you are the only one who figured out how to hold a team of six and everyone thinks you're cheating.

I have been playing through Pokemon Moon these last couple of days - not completed it yet.
It is a total different experience the second time around. If you ask me the pace is really slow in this game, and I have a difficult time enjoying the journey.
The first island MeleMele is so slow, and pretty boring and feels like a chore. Though all characters are introduced and they are mostly fun and vivid, it is a tough island to go through.
Akala island is really fun! A good pacing here and it feels fun and cool to travel through.. but now I am at Ula Ula island, which yet again is slow..
Most of all the island suffers from weak characters and not enought introduction and the pacing is off.
I really get the feeling, which some people have pointed out on other forums, that the game was rushed and some characters got the tough treament (the fairy captain?! The flying Elite four?! the missing golf course?)
And the Z-moves? useless? Not as cool as thought and because of my team comp. I have not received those I need for my team.
Now to the good stuff from the playthrough
I went with Incineroar, which is a beast. So much personality in that Pokemon - just his presence, his animation and "lvling" him in Pokemon Refresh is joy!
It leads me to all the pokemon (or most of them) they are alive! More than ever!
And so is the world more or less - The graphics so good and the world is alive and fun to be in (though the pacing is weird). I still feel like this is one of the best games in the series! And I cannot wait for "stars" (if its true). Then they can maybe fix and add in the missing stuff.
Sun&Moon is such a great game, but they have used more time on the pacing of the game.. I find it so off..

In my case I probably won't pick another Pokemon game if the formula will stay mostly the same. I mean Sun was enjoyable, but I had this moments that I didn't want to push through.
There's still this unannounced Pokemon game for the Switch in the making. I really hope it will be a bomb!

For now there's still no information what exactly it is. It can very well be Pokken Tournament enchanced edition or sth.
I'm really hoping for a full-fleged Pokemon game cus:
1. Nintendo is pouring everything they have to make Switch great.
2. The age-old argument that they're making Pokemon games for the DS family consoles because of their accesability for kids/portability is gone cause Switch is basically a handheld console on steroids

Though an upgraded (bigger rooster!) Pokken Tournament wouldn't be that bad also...

I haven't played Pokken Tournament. But the rooster is pretty "small" and is easy to increase. So many fun ones to add.

Yeah I definately gonna buy Pokken Tournament DX. It looks super cool. Sure a bigger rooster would be good, but it gets the Mario Kart Treatment as such all so far released Pokes plus a few new will be added. And all of them are cool, especially Decidueye.
I even watched the Invintational and it only got me more interested in this game. As a plus it can be played by two players from the get go and brawl games are always fun.
The only real downside of this game is that it's a brawler. I mean it's nice for short bursts of play but it can get boring pretty fast. Other dowside is that there are so many Pokemon that could potentialy be added to this but we will probably get only a few more (for the past 2 years this game has been out they've added less then 10 Pokemon I think).
I'll pass on Ultra Sun & Moon. The game is getting a re-release too soon imo...

I enjoyed pokken quite a lot on the Wii u, I'd definitely recommend it. The small roster was its biggest flaw. Graphics are dope though I've never seen such "real" looking Pokemon. You can see the fur on them
Can someone explain the point of ultra sun/moon? Didn't it come out last year?

That's Sun and Moon. Ultra Sun and Ultra Moon is continuation or something, with different looking Legendary Pokémon.

Yeah it appears the story revolves around Necrozma, which was an end-game bonus like Pokemon in the first games. I've also seen a trailer analys and it looks like the story takes time after the original (your house is already developed, the islands have changed etc).
But unless it has some really cool features I think I'll pass. I'd rather wait for the Switch game (even if it takes a lot of time to finish) cause I think it will bring a lot of freshness to the series...

Ultra S&M's story is taking place a year later IN A DIFFERENT UNIVERS (a different timeline).
It is an alternate version of Sun&moon. So not like B&W2 which was a sequel. This is an alternative version.
