I've just got my hands on a Gameboy Color Emulator for my Cell ;P
And, i've got the good old classic Pokemon Yellow 
It brings back some memories from my time in school ;p
I refuse to look for a walkthrough, cuz i like to figureout everything for myself!!
But atm. i've encountered a problem :S .. I've found an Eevee at the back of some giant building
Buut, i don't know what i should evolve it to :S
I don't need another water, fire or electric pokemon.
I already have a Gyrados, Charmeleon and a Raichu...
So, wich of eevee's evolves is best?

Personally I like Espeon, but it depends on what you want it for. Espeon is a good damage-dealing Pokemon, Umbreon is more durable. What's your normal play style, or what niches do you need filled?

Umbreon, Jolteon and Vaporeon were the best ones in gen 2, imo. Espeon is too inferior to Alakazam.

Evolve Eevee to Umbreon on level29-level30. thus Your umbreon gets bite AND confuse ray. Sand Attack, Confuse Ray, Double Team and Baton Pass are good moves for Umbreon(IMO). Of course, this is only for gen 2.
In Gen 1 I usually went with whatever I needed, but seeing as you don't need any of the types I suggest Jolteon.
@gnomes, for your earlier request about comparing Conquest to fire emblem/FF: Tactics...I have been stumped for quite a few days trying to answer this question. As for replayability, read this; I have yet to finish all 36 campaigns(not counting the downloadable campaigns).

Are we not forgetting something here people. Gnu is playing yellow, a Gen 1 game. Therefor there are only 3 evolutions possible for eevee. Namely Flareon, Vaporeon and Jolteon.
Seeing how he already has, arguably, better pokemon in Gyarados, Charmeleon and Raichu, it realy doesn't matter what he evolves it in IMHO.
Personally I think Vaporeon looks the best of all the Eevee-lutions, but they all share the same fault of trying to look too cute.

As I said earlier, I prefer Jolteon out of the three. However I usually go with Flareon because I usually lack good fire types(but you are playing yellow, where you get a über team for free...).

I haven't played yellow, so I don't know if one specific eevee evolution is much better to have than the others.
Though Flareon is still bad for the same reason, it's a fire type which focuses on physical attacks. So no 50% enhanced damage bonus to your best offensive stat.
I think both Jolteon and Vaporeon are good choices. In general I think Gyarados in gen 1. is a better choice than Vaporeon and you seem to try to limit the amount of same type pokemons you have.
Speed is an incredible powerful stat in gen. 1. Further more it seems like you've evolved pikachu into raichu, assuming your pokemons are around the same level, they gotta be between level 20-35 right now.
Raichu learns no new moves after it's been evolved into, so if you evolved pikachu before level 26 you'll probably have to learn raichu thunderbolt via tm's. Likewise jolteon will need to learn thunderbolt from a tm.
So I suggest to go for Jolteon, if you've the stone needed, but you probably won't have much use for it, before you get a thunderbolt tm.
If you want power now, then you could have 2 water types, gyarados and vaporeon and give them both the powerful surf move, which I imagine you get much earlier than thunderbolt.

Arn't all of them special attack types that specialize in physical stat though? In that respect they are alike, its kinda the point.

I don't think he is trying to limit same types. It is just that you don't need more than six pokémon in a core team which you seldom switch out, and therefore having two of the same type is often a bad idea.

I agree with this, ditch pikachu and use Jolteon.
By the way, have you considered NOT evolving Eevee? To keep it as just that, an Eevee?

First: I love Jolteon - so if it was me, I would go for Jolteon!
Second: I always choose those I really think are cool, and not those who statistically is superior!

Negative:
Jolteon: Special Attack Base 110 (2nd best stat, after Speed)
Vaporeon: Special Attack Base 110 (2nd best stat, after HP)
Flareon: Special Attack Bas 95 (3rd best stat, after Attack and then Special Defense)
Vaporeon has a Base Attack of 65, as does Jolteon. Hardly physical attackers.

In Gen I, there's only one special stat which means special attack == special defense.
Flareon happens to be so lucky that its special stat in Gen 1, is equal to its special defense in later generations, i.e. 110.
So it seems like I was wrong about Flareon, with a base of 110, it looks a lot like a power house which can combine physical and special to great effect.
Still, it's a slow glass cannon, with many weaknesses, so not my cup of tea. But that's more of a playing style thing.

Indeed, I remember Flareon quite well from my time with a GBC(before it broke down and I can only play emulators of it), and he was quite the powerhouse back then. As I said earlier, I used to go with Flareon because I had a serious lack of fire types whenever I got Eevee.

Well snow my answer then. If your not playing Yellow and you already got three pokémon of fire, water and electric type then just chose whatever you want! Make it Flareon, Vaporeon, Jolteon or keep it as an eevee or chose not to use it. I don't care!

^Forgot about this. Although Rock and Ground moves are all Physical IIRC so it's only really helpful against Water. So yeah, glass cannon.

If you still read this thread, then there's one more thing, I think is relevant to mention.
Though it doesn't have anything to do with the original question, it's something which frustrated me quite a lot some ~12 years ago, before I had access to the world wide web.
Unless you've the possibility to trade, I suggest to stay clear from the very tempting, alakazam, gengar, golem and machamp. No matter what level you get their pre-evolved states to, they'll not be evolved into. They're only evolved into during a trade between two players.
I recall how I ran around frustrated in my gen 2 game with a level 60 graveller and a level 60 haunter, not understanding why I couldn't get them to evolve. That was even before I trained any other pokemon.
